Tuscan cooking sits in a delicious sweet spot: more refined than the rustic south, yet more earthy and ingredient-led than the elegant north. Expect superb-quality ingredients elevated by time-honoured techniques; beans, bread, olive oil, seasonal vegetables, handmade pasta and deeply flavoured sauces. Add exceptional locally reared meats such as cinghiale (wild boar), rich meat spreads, cured meats, pecorino and hearty ragùs, and you have a cuisine that’s rustic, generous and deeply satisfying.

Tuscany is one of the world’s most important wine regions, with a story stretching from the Etruscans to Chianti Classico. Sangiovese, the region’s noble grape, shapes its most iconic reds, celebrated for bright cherry fruit, savoury depth and perfect food-friendly structure. Alongside these classics, Tuscany’s cooler vineyards craft fresh, modern whites from Vermentino and Vernaccia.

Your evening begins with a Negroni, the classic Florentine aperitif created in 1919.
We’ll explore a hand-picked line-up of wines paired with a bespoke three-course menu created by the kitchen team at The LAST. Discover why Chianti shines at the dinner table, taste a richer, modern expression of Sangiovese, and enjoy elegant whites including Vernaccia di San Gimignano. We’ll finish with a Tuscan dessert and a glass of Vin Santo, the region’s legendary ‘Holy Wine’.
