October sees the second outing of Cava Discovery Week and to celebrate this, we’re very pleased to be able to partner with D.O Cava for an afternoon of Dim Sum and wine matching at the Yang Sing.
It’s a great opportunity to see just how good proper Cava can be, and to see why it deserves its place among the world’s top sparkling wines. Every Cava is made in the traditional method used for all high-class sparkling wines around the world. However, that still leaves scope for a variety of styles depending on the producer, the grapes used and the time the wines are allowed to age in the cellars.
So for this tasting, we’re splitting the wines into four categories
- Fresh young wines made from the traditional grape varieties Macabeo, Parellada and Xarel.lo
- Similarly young wines but with input from other grapes, particularly Chardonnay
- Rosados in which red grapes make more of their presence felt but which still vary widely in character as the pair for this tasting will demonstrate
- Gran Reservas which have to have a minimum of 30 months ageing – and we’ll be trying one that has had an astonishing 80 months in the cellars!
We’ve asked our friends at the Yang Sing to come up with some delectable dim sum from their extensive selection to serve with each of these styles, and already we’re salivating at the prospect.
Normally we have six wines in our tastings: in this instance, there’ll be no fewer than NINE difference Cavas, ranging in price from £12 to £30+. And thanks to the generosity of D.O. Cava, we’re able to offer this tasting including all food and wine for the remarkable price of just £35 per person.
