Of all the bubbles in all the world, Cava has to be the one that flies under the radar but, in doing so, we loose out big time!
First created by Josep Raventós i Fatjó in 1872, using exactly the same techniques as in Champagne, this gorgeous sparkling wine is undergoing something of a revolution, and for good reason.
Produced in seven of Spain's autonomous regions, the focus of production is in Cataluna with Rioja, Navarra & Valencia also producing stunning examples. And with ageing regulations firmly in place, the best examples show stunning bottle development in excess of 3 years, sometimes up to 10 years.
